No PBR option under shader menu

So, I’m trying to get a texture properly set up. I’ve followed the Witch Hat tutorial a few times now, but the textures never look right in the end. I even modeled something myself and tried again, but it still didn’t work. Eventually, I figured out that it wasn’t reading my ORM texture.

Then, I opened the Metallic PBR Helmet example and noticed that it had the PBR option under the shading menu, not just the PBR glTF option. This allows to manually set the texture to the material like in any other software. However, when I import an FBX or glTF file, that option doesn’t show up.

What’s worse, I downloaded the Viking Helmet, which initially had the PBR option, but when I reopened it, the option was gone. So now I can only assume this is a bug. Before I uninstall the software, though, I want to know if I might be doing something wrong.
